Israel Johnson is a South Florida restaurant operator, general manager and hospitality educator with 30+ years of experience. He works hands-on inside restaurants to fix operations—cost and labor control, SOPs, training, management accountability and service—and can help turn around an operation in approximately 30 days where appropriate. He then leaves the business with Playbook, the system he created for maintaining standards. As GM of The Bungalow Bar & Grill in Boynton Beach, he helped grow the restaurant from startup to $1M+ in annual sales.
Serving Palm Beach County and South Florida, including Boynton Beach, Delray Beach and West Palm Beach.
The person behind the work
Founder & Product Architect
Israel Johnson is a South Florida-based hospitality operations executive, university educator, chef, author, consultant and technology builder. With 30+ years across restaurant and hospitality operations and 20+ years teaching hospitality at the university level, he works at the intersection of people, systems and execution.
He builds systems to solve real operating and human problems: how teams learn, how leaders coach, and how standards survive a busy shift. Playbook Culture brings Israel Johnson's executive experience, restaurant consulting and hospitality ventures together.
For restaurant owners and ownership groups, that means hands-on turnaround and operations consulting backed by Playbook: a practical system for sustaining training, SOPs, inspections, accountability and management routines after an engagement ends.

Playbook consulting / Led by Israel Johnson
Your restaurant doesn’t need another report. It needs results.
Bring in Israel Johnson for a focused 30-day operational turnaround designed to identify profit leaks, strengthen management accountability, improve labor and cost controls, tighten systems, improve service execution, and build a more disciplined operation.
One package
“I don’t just tell restaurant owners what’s wrong. I can help build the recipes, systems, training, controls and accountability needed to fix it.”
From the kitchen to the P&L, from onboarding to guest experience, the objective is one integrated operating system.
A defined engagement
DAYS 01 — 03
Israel is on-site establishing the financial and operational baseline: labor, COGS, purchasing, scheduling, management, reviews, service, and SOP gaps.
DAYS 04 — 10
Stop immediate leaks, establish accountability, and repair the systems with the greatest near-term impact.
DAYS 11 — 20
Build SOPs, recipes, manager routines, scorecards, labor and cost controls—and train the team and management to run them.
DAYS 21 — 30
Measure results and correct misses, then hand over: systems documented and digitized in Playbook where appropriate, management routines and scorecards, and a continuation plan.
One operator, every system
This is not a consulting report you file away. The engagement can address the operation from financial controls through recipes, people systems, service systems, and technology — wherever the diagnosis points.
The exact scope is customized after diagnosis. No two engagements are identical, and not every restaurant needs every system above — the scope is built around what your operation needs most, within the typical $5,000–$6,000 engagement range.
Built to last
I don’t leave you with a binder. Where appropriate, your new operating standards are built into Playbook so the systems can continue after the 30-day engagement.
Professional fee
30-Day Turnaround engagements typically range from $5,000–$6,000, depending on the size, complexity, number of departments/locations, and scope of the operation.
Ongoing engagements
For ownership groups seeking continued implementation, accountability, leadership development and operational support — with Israel Johnson providing continued hands-on leadership, management development and Playbook system support after, or instead of, a short turnaround engagement.
Clear terms, measurable work
Before the engagement begins, we establish the operational baseline, the specific 30-day objectives, the information and access required from ownership, and the measurable performance targets. If the agreed 30-day deliverables and performance commitments are not met, the client may qualify for a refund or service credit of up to 50% of the professional fee, subject to the written engagement terms.
Results depend on baseline conditions, accurate financial and operational data, management cooperation, implementation authority, and timely execution. No specific profitability outcome is guaranteed.

Executive Portfolio · Experience & Proof of Work
More than a résumé: see the systems, operating philosophy, technology and measurable restaurant work behind the experience.
For ownership groups and employers, this is leadership that can step into an existing organization and raise its standards. For independent owners, it is an operator who can solve problems directly.
Three decades across independent restaurants and hospitality operations.
Restaurant ownership experience—accountable for the whole business, not one department.
Leading teams, managers, standards and daily execution across FOH and BOH.
Recipes, menu development, costing, kitchen workflow and BOH standards.
University-level hospitality instruction—translating operations into teachable systems.
Onboarding, coaching, role clarity and developing the next layer of leadership.
SOPs, recipes, training, operational and financial-control systems built to last.
Creator of Playbook—decades of operating experience turned into software.
One leader who bridges the entire operation
Case study
General Manager — The Bungalow Bar & Grill | Boynton Beach, Florida
Israel Johnson assumed General Manager leadership within weeks of The Bungalow Bar & Grill's opening, while the restaurant was still in its startup stage. He helped build the operation from the ground up—developing the people, systems, standards, training, accountability, guest experience, and operational structure that supported its growth from startup to more than $1 million in annual sales.
During his leadership, the restaurant accumulated 1,200+ combined Google and Yelp reviews, with approximately 85% of Google reviews at five stars and approximately 70–75% of Yelp reviews at five stars.
This wasn't a mature operation he inherited. It was a restaurant he helped build.

Employees perform the required responsibility.

Pictures, certifications and submissions provide proof of execution.

Operational engagement
Playbook becomes where restaurant culture and execution meet.
Performance & points
Restaurants designate the behaviors and achievements that earn employee points and recognition. Employees understand what matters. Managers can recognize it when it happens.
Restaurant leadership sets its own policies for points, recognition, incentives and scheduling. Playbook makes performance measurable — it does not make employment decisions.
Behaviors restaurants commonly reward
Training & certification
Build training programs around the way your restaurant actually operates. Employees complete the training and then demonstrate knowledge through quizzes and certifications.
New menu implementation
When you launch a new menu, policy, procedure or initiative, management can create the required training and certification. Employees demonstrate knowledge before being assigned responsibilities that require it, according to your restaurant’s policies — so major operational changes stop depending on verbal communication alone.
Why Culture Wins
Culture is what we build. Playbook is how we build it. Menus get copied. Concepts get matched. Behavior doesn't. Playbook connects training, execution, coaching, recognition, and guest feedback so an independent operator can see whether the standards being taught are actually being run on the floor—and what that consistency is worth.
Leadership → Playbook → Team → Execution → Culture → Guest Experience → Profit
Alignment
Everyone knows the standard, the priorities, and the why behind them—from owner to new hire.
Accountability
Clear expectations and visible follow-through turn good intentions into daily habits.
Consistency
Every shift executed the same way, so guests get the same experience every visit.
Recognition
Great work gets seen and celebrated—the fastest way to lower turnover.
Engagement
Teams that feel heard, developed, and valued stay longer and take better care of guests.
Culture Intelligence
Training completion is the starting line, not the finish. Playbook is built so the signals that already flow through your restaurant—training, certifications, operational execution, coaching, recognition, guest reviews, and management follow-through—connect to each other, so you can see whether the behaviors you teach are the behaviors you get.
One Restaurant. One Team. One Culture. One Playbook.
The Cost of Doing Nothing
You don't buy Playbook because you need another app. You buy it because every untrained shift, every repeated question, and every employee you replace is money leaving the restaurant. Here's where it goes—and what Playbook does about it.
Turnover
Every employee replaced means recruiting, onboarding, training hours, and weeks of lost productivity.
Preventable Mistakes
Under-trained teams create comps, waste, remakes, and guests who don't come back.
Inconsistent Standards
When the experience depends on who's working, guests notice—and so do your reviews.
Repeated Questions
Managers paid to lead spend their shift re-explaining the same procedures and policies.
Missed Communication
Group texts and whiteboards create operational mistakes nobody meant to make.
Knowledge Walking Out
When a manager leaves, the way your restaurant runs leaves with them—and you pay to rebuild it.
Your Digital Assistant Manager
If you have to teach it repeatedly, it belongs in Playbook.
You lead the culture. Playbook helps run the system—training, communicating, reinforcing, certifying, and organizing your standards across the team, every shift. It handles many of the repetitive assistant-manager tasks digitally, so your existing leadership can cover more ground without automatically adding management payroll.
Train once. Reinforce continuously.
